中文摘要: 为了解红糖中多元素含量及分布情况,采用微波消解技术进行样品前处理,电感耦合等离子体质谱(ICP-MS)测定红糖中31种元素,并对红糖中无机元素进行分析评价。结果表明,31种元素测定的方法检出限在0.002~0.5 mg/kg范围内,方法重现性好,RSD均小于6%,不同元素加标回收率在80%~120%范围内,有证标准物质测定结果符合要求,方法准确可靠,适用于红糖中无机元素的测定。通过分析不同类别红糖的测定结果发现,以甜菜为原料的红糖中Na含量普遍较高,甘蔗为原料的红糖中K、Ca、Mg等微量元素含量丰富,营养价值高;对红糖中各元素含量的主成分分析结果表明Ca、Sr、Zn、Na等为红糖的特征元素;安全性评价表明红糖中砷、铅等重金属符合食品安全要求。该研究分析了不同原料来源红糖中元素组成、含量分布特征,为有效评价红糖的营养价值与食品安全提供有效依据。
Abstract:In order to understand the content and distribution of multiple elements in brown sugar, 31 elements in brown sugar were determined by microwave digestion technology, inductively coupled plasma mass spectrometry (ICP-MS), and the inorganic elements in brown sugar were analyzed and evaluated. The results showed that the detection limit of the 31 elements was in the range of 0.002~0.5 mg/kg, the method reproducibility was good, the RSD was less than 6%, the recovery rate of different elements was in the range of 80%~120%, the determination results of the certified reference materials met the requirements, the method was accurate and reliable, and it was suitable for the determination of inorganic elements in brown sugar. Through the analysis of the determination results of different types of brown sugar, it was found that the Na content of brown sugar with sugar beet as raw material was generally high, and the brown sugar with sugarcane as raw material was rich in trace elements such as K, Ca, Mg, etc., and had high nutritional value. The results of principal component analysis of each element in brown sugar showed that Ca, Sr, Zn and Na were the characteristic elements of brown sugar. The safety evaluation showed that the heavy metals such as arsenic and lead in brown sugar met the food safety requirements. This study analyzed the element composition and content distribution characteristics of brown sugar from different raw material sources, which provided an effective basis for effectively evaluating the nutritional value and food safety of brown sugar.
