Abstract:
      ABSTRACT:To explore the mineral nutrition of " Hinggan League rice ", the rice from Hinggan League of Inner Mongolia was taken as the research object, and rice from Hulun Buir, Inner Mongolia, Hohhot, Inner Mongolia, Ordos, Inner Mongolia, Wuchang, Heilongjiang, and Panjin, Liaoning were used as reference. The content characteristics of 11 mineral elements such as potassium, calcium and magnesium in northern rice were analyzed by ICP-MS, and conduct correlation, principal component, and nutritional evaluations. The results showed that the contents of 11 mineral elements in rice in six northern evaluation areas including Hinggan League were quite different.The coefficient of variation of 11 mineral elements is between 9.22% and 88.95%. Except for K, Ca, and Na, the coefficient of variation of the content of all other mineral elements is above 20%. The coefficient of variation of Fe and Mg is relatively large, the content from large to small is K > Mg > Ca > Na > Zn > Fe > Mn > Cu > Cr > Cd > As, among which the content of K was higher. Ca was significantly positively correlated with Na, Mg, Mn, Fe and Zn ( P < 0.01 ).The mineral content in rice shows significant differences, with heavy metal content lower than the national standard value, and Cd, Cr, and As exceeding the standard,There are varying degrees of correlation and dependency between elements, Ca, Mg, Zn, Fe, Na and K were the main characteristic mineral elements in rice, with a cumulative variance contribution rate of 75.27%. The health evaluation shows that the comprehensive nutritional score of "Hinggan League rice " was equivalent to that of Wuchang rice, and it is a green grain food with high potassium, high magnesium, and no heavy metal pollution. The nutritional value of trace elements such as iron and manganese has a significant advantage.
